Chocolate Banana Bread

Last Thursday I was supposed to have a 5:30am client, so I got up, got dressed, ate, drank coffee, and was about to head out the door at 5:00 when I see a text, “I’m not feeling well, can we push our session out to tomorrow?”

Ugh.

Typically I would have said no and burned the session, but due to other circumstances I let it slide and pushed the session out to the next day.

So there I was awake at 5:00am and I decided to make some chocolate banana bread.

Most people probably would have gone back to bed, but I decided to take advantage of the peaceful morning hours that I don’t typically see. Plus, there was some sort of rain-snow situation going on outside, so baking a warm chocolate-y loaf of banana bread just seemed right.

And then I had a loaf of chocolate banana bread at my fingertips to enjoy, soooo… no complaints.

This chocolate banana bread recipe is adapted from this basic banana bread, but I replaced some of the flour with cocoa powder and traded the walnuts for chocolate chips. The wet ingredients are mixed into the dry before pouring the batter in a loaf pan. I decided to sprinkle some coffee grounds on top for an extra crunch and a light hint of coffee flavor to balance out the chocolate. I really liked it, but you could totally skip it if you wanted. It’s simple to make, even in the wee hours of the morning while your eyes may only be half-open.

The result is a delicious, moist loaf of banana bread with just the right hint of chocolate. It’s perfect for a mid-morning snack, but I wouldn’t argue with you if you ate it for breakfast and/or dessert.

Oddly enough I posted that basic banana bread recipe almost exactly one year ago. Isn’t that weird? I can still clearly remember sitting down to type up that post as the banana bread was baking in the oven.

My life is so different now than it was then: Minneapolis to Denver. Supply Chain to Personal Training. Owning a condo to renting a garden level duplex. Lakes to mountains. Family close by to family far away. Not different in a bad way, just different.

I haven’t quite gotten into my groove here in Denver, but now I’m ready to start hustling.

This chocolate banana bread is moist and delicious with the perfect hint of chocolate. It's perfect for a mid-morning snack accompanied with a big mug of coffee, but would be great for breakfast and/or dessert as well!
Serves: 12 slices
Ingredients
  • 1 ¼ white whole wheat flour
  • ½ cup cocoa powder
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • ½ cup (1 stick) butter, melted
  • 2 medium overripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ¼ cup buttermilk
  • ½ cup chocolate chips
  • 1 teaspoon coffee grounds (optional)
Instructions
  1. Preheat the oven to 350 degrees. Grease a 9x5 inch loaf pan.
  2. In a small bowl, mix together the flour, sugar, baking powder, salt, and cinnamon.
  3. In a medium bowl, combine the melted butter, mashed bananas, vanilla extract, eggs, and buttermilk. Whisk until combined.
  4. Add the wet ingredients into the dry and stir until just combined.
  5. Stir in the chocolate chips, saving some for the top of the loaf.
  6. Pour the batter into the prepared pan then sprinkle with the coffee grounds and remaining chocolate chips
  7. Bake for 50 minutes or until a toothpick is inserted and comes out clean.
  8. Let the bread cool in the pan for 10-15 minutes before removing and transferring to a cooling rack to cool completely.
Notes
You can make your own buttermilk by adding a little bit of lemon juice to regular milk (soy, dairy, almond, etc) or yogurt.
This bread will keep for a few days wrapped in plastic wrap or in the freezer for a few months.

Side note: I brought a majority of this loaf into work and crossed my fingers that the other trainers wouldn’t shame me and hate me for bringing in something not so healthy. They didn’t. They ate it and they loved it. I can’t explain to you how happy it made me.

Brown Butter Chocolate Chip Banana Bread

My roommate and I have found ourselves in a little situation: we have a stockpile of ripe bananas in our freezer.

Do bananas ripen much quicker in a kitchen that is approximately 7 degrees too warm? Or do they ripen much quicker in Denver than in Minneapolis? Or are we just buying bananas that are already too close to ripening?

I guess it doesn’t matter. A stockpile of ripe bananas = An abundance of banana bread.

It’s actually a pretty good situation to be in and neither of us were complaining about eating this brown butter chocolate chip banana bread.

Last week I came home from a particularly promising interview and didn’t want the good vibes to go to waste, so I dug into the ripe banana stockpile and whipped up some banana bread <— good decisions.

And decided to use brown butter and chocolate chips <— the best decisions.

I turned on some tunes, browned butter, mashed bananas, mixed the wet with the dry, threw in a handful of chocolate chips, and just kept the good vibes going. Soon the delicious aroma of banana bread was filling the house.

This is the beauty of banana bread. It is so easy to make and smells like a dream.

Plus, can we just all agree that fresh banana bread is one of the greatest things to eat ever?

I ate some, saved some for Katie, and brought the rest into Blackbird for my co-workers. That’s how I make friends… along with my charmingly awkward personality.

Brown Butter Chocolate Chip Banana Bread

Few things are better than freshly baked banana bread, but add some brown butter and chocolate chips in the mix and you know you're going to have a great day.
Serves: 12 slices
Ingredients
  • 9 tablespoons butter, unsalted
  • 2 large ripe bananas, mashed
  • ½ cup brown sugar, packed
  • 1 egg
  • ½ teaspoon vanilla extract
  • 2 tablespoons milk
  • 1 ½ cup flour
  • 1 teaspoon baking soda
  • ½ cup chocolate chips
Instructions
  1. Preheat the oven to 350 degrees. Grease a 9x5 inch loaf pan.
  2. Melt butter in a medium saucepan. Continue to whisk until brown specks appear at the bottom, it will froth and foam a bit. Watch closely and be careful not to burn. It should be a light brown color and have a nutty aroma. Pour butter into a medium bowl, whisk in an ice cube, and let cool for a few minutes.
  3. Add the mashed bananas, brown sugar, egg, vanilla, and milk. Whisk until thoroughly combined.
  4. Add the flour and baking soda and stir a few times until just combined. Lumps are ok!
  5. Fold in the chocolate chips, saving some for the top of the loaf.
  6. Pour the batter into the prepared pan and sprinkle with the remaining chocolate chips.
  7. Bake for 55-60 minutes or until a toothpick is inserted and comes out clean.
  8. Let the bread cool in the pan for 10-15 minutes before removing and transferring to a cooling rack.
  9. Slice and serve the bread warm with your favorite spread. It will keep well for a few days wrapped in plastic wrap or in the freezer for a few months.
Notes
You can use any type of milk (dairy, almond, soy, etc) and yogurt works too.

If you are baking this in altitude, make the following adjustments: add an additional tablespoon of milk and flour and take just a little bit out of the teaspoon of baking soda and ½ cup of brown sugar. Also, increase the oven temperature to 365 degrees and reduce baking time to 45-50 minutes.

Chocolate Chip Raspberry Banana Bread

Do you ever go to the grocery store and “accidentally” buy too many bananas so that you can either store the extra in the freezer or wait for them to over-ripen on your counter so that you can make banana bread?

No? Yes! No? Just me?

Well. I advise you to try it out. I also advise you to add dark chocolate chips and fresh raspberries to your grocery list, because this raspberry chocolate chip banana bread is so, so good and you’re going to want to make it.

So let’s do it!

First, we’ll gather the ingredients. The stars here are the bananas, raspberries, and dark chocolate chips. Obviously. But we’ll need some other things too – flour, baking soda, brown sugar, milk, and an egg. Also, we’re going to use Greek yogurt instead of butter. Not because we don’t love butter, but just because.

Next, mash up those beautiful, brown bananas. Mash them really, really good. We basically want them to be like liquid. Then stir in the brown sugar, egg, Greek yogurt, and milk until everything is super combined. Throw in the flour and baking soda and give the mixture a couple of stirs. Lumps and pockets of flour are a-ok. I realize that this will be hard for you perfectionists out there, but you can do it. Leave some imperfections. Fold in the chocolate chips and raspberries, being careful not to over stir. Finally, pour the batter into a greased loaf pan and place it in the oven.

In 50 minutes your kitchen will smell far too delicious and you’ll have an exquisite loaf of bread on your counter. This is happiness.

So much happiness that I had to give most of this loaf away. Which was really hard to do. Probably the hardest thing I had to do all week. Except for that 17 mile run yesterday. #strugglefest.

So yeah. What I’m trying to say is this stuff is really good. Basic banana bread and chocolate cacao nib banana bread are good too, but this chocolate chip raspberry banana bread is like really good.

Soooo… uh… make it. And eat it. And drink some coffee. And have a FANTASTIC Memorial Day weekend!!

This Chocolate Chip Raspberry Banana Bread is a snazzy version of regular banana bread. It's simple, a little bit healthy, and so, so very delicious with bursts of chocolate and raspberries.
Serves: 1 loaf
Ingredients
  • 1 ½ cups + 1 teaspoon all purpose flour
  • 1 teaspoon baking soda
  • 2 medium very ripe bananas
  • ½ cup brown sugar
  • ½ cup full fat plain Greek yogurt
  • 1 egg
  • 2 tablespoons milk (any sort of milk will work: cow, almond, coconut, soy, etc)
  • 1 pint raspberries
  • ¾ cup chocolate chips
Instructions
  1. Preheat the oven to 350 degrees. Grease a 9x5 inch loaf pan.
  2. In a small bowl combine the flour (just 1 ½ cups) and baking soda. Set aside.
  3. In another small bowl toss the raspberries with the remaining 1 teaspoon of flour. Set aside.
  4. In a large bowl mash the bananas until they are very, very mashed.
  5. Whisk in the brown sugar, Greek yogurt, egg, and milk until they are thoroughly combined.
  6. Stir in the flour. Lumps are ok.
  7. Fold in the raspberries and chocolate chips, saving some to sprinkle on top.
  8. Pour batter into the loaf pan and top with the remaining raspberries and chocolate chips.
  9. Baked for 50-55 minutes.

Basic Banana Bread

Some days just aren’t my days. On these days alliwannado is bake. So bake is what I shall do. And bake is what I did.

basic banana bread I didn’t want anything complicated. Something simple that was comforting and delicious. No tricky concoctions. No big mixer. Just some bowls and spoons and some simple baking magic.

Thus we have here: basic banana bread.

basic banana bread When I say basic, I mean basic. This is banana bread at essentially its purest form: 2 parts flour, 2 parts liquid, 1 part egg, 1 part fat. I also added some toasted walnuts and cinnamon, because walnuts, cinnamon, and bananas are like the three best friends and we needn’t separate best friends.

basic banana bread Baking like this is therapy. It’s a no fuss recipe. All we need here is ten ingredients, two bowls, some measuring equipment, and a whisk.

Mix the dry. Mix the wet. Combine the dry and the wet. Stir in some nuts and pop it in the oven. That’s it. That’s all it takes. The only difficult part is waiting for it to bake while your kitchen fills with the sweet banana bread smell.

Even those who “cannot bake” can successfully make this bread happen. I promise you.

basic banana bread When I say that it is basic, I don’t mean to say that is isn’t delicious. It is. This banana bread is goooooood. I want to curl up inside of it and take a warm, cozy, banana bread nap. But since I am not Miss Frizzle and cannot in fact shrink myself to fit inside the banana bread (remember this episode?!), I will instead settle for enjoying it with a big ole cup of coffee and a brand new day. Like I did this morning and will tomorrow morning too.

basic banana bread Last night I decided that with the whole pain in my hip/leg/knee I am just going to stop running. Not one more running step until I walk up to the start line of the Philadelphia Marathon on November 23 and hear the starting gun… or whistle or announcement or whatever they use to signify the start of the run (plus about 5 minutes, because I’ll be at the back of the pack). Then from there I will try to run/walk/survive 26.2 miles while having as much fun as I possibly can. Who knows, maybe with all the rest I will have some sort of Philly Rocky miracle. Riiiiighttt???

In the meantime I will get an x-ray (eeks!) and do lots of yoga and cross training and foam rolling and, let’s face it, baking.

  • ½ cup + 1 tablespoon granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • ½ cup (1 stick) unsalted butter, melted
  • 2 medium overripe bananas, mashed
  • ¼ cup buttermilk
  • 2 large eggs
  • 1 cup walnuts, chopped and toasted
Instructions
  1. Preheat the oven to 350 degrees. Grease a 9x5 inch loaf pan.
  2. In a small bowl, mix together the flour, sugar, baking powder, salt, and cinnamon.
  3. In a medium bowl, combine the melted butter, mashed bananas, buttermilk, and eggs. Whisk until combined. Having some small banana lumps is completely ok.
  4. Add the wet ingredients into the dry and stir until just combined.
  5. Stir in the walnuts, saving some for the top of the loaf.
  6. Pour the batter into the prepared pan and sprinkle with the remaining walnuts.
  7. Bake for 50 minutes or until a toothpick is inserted and comes out clean.
  8. Let the bread cool in the pan for 10-15 minutes before removing and transferring to a cooling rack.
  9. Slice and serve the bread warm with your favorite spread. It will keep well for a few days wrapped in plastic wrap or in the freezer for a few months.
Notes
When measuring the flour spoon the flour into the measuring cup rather than using the cup to scoop out the flour. The first cup can be full, but make the second one just a little bit short.

Toast the walnuts by placing them on a baking pan in the oven for 5-10 minutes or until fragrant. You can go ahead and put them in right when you start the oven, no need to wait until it is fully pre-heated!

My open heart surgery was 7 years ago and it’s an My open heart surgery was 7 years ago and it’s an anniversary I will never not celebrate. 

I carried a lot of trauma with me for a long time. I was nervous for every hike, every workout, religiously checking my heart rate, wondering if this would be the time my heart fails me again. Very dramatic, I know. But I kept at it, doing these things I love to do, working through the fear. Now the intrusive thoughts are few and far between. 

So here I am 7 years later, a stronger person both physically and mentally, hanging out at the top of a mountain with my babies after a nice, challenging hike.  It’s all I really want. 

I’m so grateful for this life and for the people who continue to support me ❤️
