Fruit & Nut Chocolate Zinfandel Cookies

One of my co-workers gave me a bottle of wine in order to make these Fruit & Nut Chocolate Zinfandel Cookies for him. I’m not ashamed to admit that I will bake for wine.

Anywho, some links and stuff this week:

  • I just got this Party Party app. I haven’t played around with it too much yet, but I’m excited too! I love pretty much everything A Beautiful Mess creates.
  • Quite a few of the books I’ve recently read are being (or have been) made into movies: Gone Girl, The Fault In Our Stars, Wild, This Is Where I Leave You, and Hector And The Search For Happiness. I want to see them all. I rarely ever go to movies, but I think I need to change that. Also, The Skeleton Twins. Kristin Wiig and Bill Hader, duh.
  • This is a great article about training for hills. I had my first hill workout for Philadelphia Marathon training this week. Eesh. It was tough and there are many more hills yet to come.
  • This Baklava Pull-Apart Bread is too amazing for words.
  • Apparently Hatch chiles are all the rage right now. Roast them, throw them in salsa, bake them in biscuits, put them on chicken. Yeah. I need to find me some of these.

HIIT IT!

Who is excited that it is Monday?!?!!

No one? That’s ok. Mondays are hard, but muster up some enthusiasm, people. We’re going to HIIT it!

HIIT IT

HIIT as in High Intensity Interval Training. I talked a bit about the concept in this Do Anywhere HIIT Workout post. Basically, it consists of short spurts of high intensity exercise followed by a short rest. The goal is to push it hard (70-80% of max). You can do it, though. I really believe in you.

HIIT IT

In less than 35 minutes you will get a warm up, a full body workout, and a cool down. This means you’ll get your workout in and have plenty of time to spare before the start of Monday Night Football (or whatever else you have planned for the evening). Awesome.

Plus, you’ll continue to burn calories long after the workout is over. This is because of a lovely little thing known as EPOC, which is excess post-exercise oxygen consumption, but you can also just think of it as afterburn.

Pretty great, right?

Thursday Things

thursday things 09.04 I just got in from a nice 7-miler with some strides. I don’t have a race this weekend, but it’s still nice to loosen up the legs a bit. Have I ever mentioned how important and amazing morning running partners are? They are the best sort of people! Without them I definitely wouldn’t be waking up at 5am to run by myself. And even if I did manage to (which I wouldn’t) the run definitely wouldn’t be nearly as enjoyable… shout out to Lindsey and Monica!

Anyways, some fun links and things this week:

  • This September Produce Guide is amazing. Let’s all take advantage of delicious, seasonal produce! The carrots pictured above are from my CSA box. They would be perfect for any of the carrot recipes listed, but this soup is definitely on my list to make sometime this month.
  • Speaking of seasonal, all of these fall fashion trends really make me want to go shopping… with a pumpkin spiced latte in my hand.
  • Two of my favorite bloggers released cookbooks this week: Seriously Delish from How Sweet It Is and Easy Gourmet from I Am A Food Blog. A.MA.ZING. These ladies know how to cook and take pictures. I can’t wait to dig in and devour page after page after page!
  • This would have been handy to know 10 years ago (or more), but better late than never! I’m sure I’ll run into infinitely more awkward social situations over the years.
  • What a fabulous little baking hack this is! Mason jars (and all their pieces) always come in handy.

Fruit And Nut Chocolate Zinfandel Cookies

Some of my favorite things: fruit, chocolate, wine, nuts, cookies. I went ahead and combined them and these Fruit & Nut Chocolate Zinfandel Cookies were born.

You what else is insane? The fact that it is September already! How, how, how in the world did that happen? Did I accidentally hibernate all summer? Where did it go?

I guess I’ll cope by eating these cookies. Let me tell you, a very delicious coping mechanism.

zinfandel cookies I love summer, but I do really enjoy fall as well. The crisp air, the changing leaves, all the varieties of apples, boots and sweaters – so great. Also, the start of school. I always loved the first day of school. I’m a huge dork, but I just really enjoyed back-to-school shopping, school supply shopping, and the first day feeling. I should’ve bought new pens or something to bring into work today. Oh well. Next year.

Anyways, these cookies! Let’s talk more about them.

zinfandel cookies The base is a delicious chocolate drop cookie, but I added in a boost of flavor with some red wine. Why? Because chocolate and wine is always a good idea. And what else goes with chocolate and wine? Fruit and nuts, of course! So I threw those in as well. The nuts add a great texture and additional crunch to the cookies, whereas the dried fruit adds some sweetness.

zinfandel cookies zinfandel cookies Cheese also works very well with this combination, but I didn’t want to go completely overboard. I’ll save that for another day.

For the wine I used Redux Zinfandel from California, which I received in one of my Club W shipments. The recipe calls for a ½ cup of wine. ½ cup < 1 bottle, so pour yourself a glass.

zinfandel cookies Go ahead and have a glass while you bake and maybe another while you taste test. Then invite some girlfriends over to devour the cookies and drink more wine. Maybe you can serve some cheese with it too? Talk about how awesome the summer was and how great the lingering weeks of it will still be. Then start getting excited about fall and having Sunday fundays while pretending to watch football paying really close attention to football games.

That’s just a suggestion. Take it or leave it.

Baking these cookies, though. That is not a suggestion. Use them as a coping mechanism for the end of summer or as a celebration for the beginning of fall. Either way, you need these in your life. You deserve these in your life.

Chocolate drop cookies with Zinfandel red wine, studded with chopped nuts and dried fruit - so many delicious things combined into one little cookie.

Serves: 36
Ingredients
  • 1½ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (1 stick) unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ½ cup red wine
  • 1 cup mixed nuts, chopped
  • 1 cup mixed dried fruit, chopped
Instructions
  1. Preheat the oven to 350 degrees. Line baking sheets with parchment paper and set aside.
  2. In a medium bowl, mix together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In the bowl of an electric mixer, cream the butter and sugar until light and fluffy, 3-5 minutes.
  4. Add the egg, vanilla, and red wine. Beat for another minute.
  5. Add in the flour mixture. Mix until combined.
  6. Fold in the nuts and fruit.
  7. Place scoops of cookie dough onto the prepared pans. Bake for 11-12 minutes, be careful not to overbake. Let cool on the sheet for a few minutes before moving to a cooling rack to cool completely.
Notes
You can use any red wine, dried fruit, and nuts that you have on hand. I used Zinfandel, a mix of dried cranberries and cherries, and a mix of almond and pecans.

Thursday Things

Wilde Roast Cafe I’m on a date with myself right now as a type this. Dinner, wine, blogging. There’s a (fake) candle on my table. It’s all very romantic.

I was surprisingly productive this week, so I decided to treat myself. I am at Wilde Roast Café. It’s one of my “go to” places in Minneapolis, because it’s perfect for any occasion: a casual brunch, a fun lunch with friends and/or family, a chill happy hour, a nice dinner (with a boy or with myself).

I love sitting at cafes with some coffee or wine and a book or my computer. It’s relaxing and energizing at the same time. When was the last time you took yourself out? You’re probably overdue.

So anyways, here are some neat things I’ve been thinking about this week:

  • This song by Kiesza has taken over my head. I discovered it during my flight to Costa Rica and have been obsessed with it ever since.
  • This Caramelized Peach + White Chocolate Oatmeal Skillet Cookie Pie is driving me crazy (in a good way). Half Baked Harvest’s recipes never disappoint.
  • Can you believe that pumpkin flavored everything season is already upon us?! Let’s skip the Starbucks pumpkin pie spiced latte and make our own.
  • There are a lot of awesome and inspiring ladies out there. Here are 10 examples.
  • Have you ever heard of Club W? Monthly shipments of wine. Need I say more? I do: it’s amazing. I haven’t been going through the bottles as fast as I thought I would though. I don’t know if that’s a good thing or a bad thing?

5 Healthy Vacation Tips

Vacations. They are amazing. A time to get away, relax, and just be.

However, it’s not rare to come back from vacations a little bit heavier (and I’m not just talking about your luggage). A new atmosphere, no routine, frequently eating out, lots of wine and indulgences… I’ve been there. There’s no reason you can’t maintain a fit and healthy lifestyle while traveling. It’s all about balance, moving, and drinking lots of water.

Below are 5 tips I compiled for staying healthy and active on vacation!

5 healthy vacation tips 1. Hydrate, hydrate, hydrate! I cannot stress this one enough. Sometimes when I’m out of my normal routine it’s easy for me to forget to drink water. Bad. Drinking plenty of water is so, so important – everyday, whether on vacation or not. While traveling you are probably in an environment that your body isn’t used to. Drinking plenty of water will help keep you regulated and hydrated. I always carry a water bottle with me and try to refill it multiple times throughout the day. This is especially important when traveling to a hot weather climate where sweating is a common occurrence, also known as “perma-sweat”.

It is a bit trickier when it’s not safe to drink the local tap water, but spending the extra money on purchasing bottled water will be worth it. I recommend buying gallon sized (or larger) water jugs. This much water is necessary and more cost-effective. You can store it in your room and fill up your water bottle whenever you need to! You don’t want to be zapped of energy on vacation simply because you’re dehydrated. Chug that water!

2. Eat breakfast! Eating breakfast is another super important everyday thing, regardless of being on vacation or not. As you have probably heard by now breakfast is the most important meal of the day. It helps fuel your body for all the exploring and activity you’ll be doing… or relaxing, it’ll help fuel your body for that too. Not only should you make sure to eat breakfast, but you also need to make sure to eat a good breakfast. And by good I mean healthy with a mix of protein, carbs, and healthy fats. A good breakfast can be easy or difficult to come by depending on where you are staying and what is available to you; however, you can always get a healthy breakfast in with some proper planning. Here are some of my recommendations:

  • If you are staying at a hotel with a breakfast buffet (lucky you) try to avoid the sugary pastries and waffles. They are over-processed and you’ll probably get a sugar spike and then hit a wall a few hours later. Plus, save your sugar consumption for an afternoon treat at a local bakery. Instead go for oatmeal and a hard-boiled egg, fruit and yogurt, or peanut butter and toast. These options will help keep you satiated and energized!
  • If you are staying at a hostel or someplace that doesn’t have a kitchen, grab some fruit and granola bars at a nearby grocery store so that you don’t have to eat out for breakfast every morning (if you don’t want to). These items can also serve as a great mid-day snack while you are out and about in between meals!
  • If you are staying in a condo/hotel with access to a kitchen, you can stock on up your regular breakfast foods. Fruit, granola, yogurt, eggs, toast – you can pretty much do whatever you want here!
  • If you are going out for breakfast, you may as well try the customary local breakfast. In Costa Rica it was rice, beans, eggs, plantains, and good strong coffee – it doesn’t get much better than that!

3. Walk everywhere! Walking is one of the simplest and most enjoyable exercises. Regular brisk walking (~30 minutes per day, 5 days per week) can help reduce the risk of heart disease, improve blood pressure and cholesterol, and boost your mood. Also, brisk walking falls within the “fat burning zone”, so you can be burning lots of fat calories while you are sightseeing: multi-tasking!

Walking is my personal favorite mode of transportation. If I want to get from A to B (assuming that A and B are only a few miles apart), my default is walking. It is also such a great method to explore a city. My friend and I once walked 5 miles to check out a local market, which then stretched on for at least another mile or so. We passed by gorgeous parks and little boutiques along the way and were able to see different parts of the city that we wouldn’t have discovered if we had taken a cab. So the next time you are on vacation and want to go to a museum or restaurant, plan a nice walking route that will help you hit other sites along the way.

Not only is walking great for your body, but it is also super cost-effective – as in, it is free! Why pay for a cab or public transportation when you can walk? I’m looking at you, budget traveller.

If you feel like picking up the pace a little bit, go on a sight-seeing run. You can fit in more miles and sights in less time, while also burning more calories! To find a good running route check out MapMyRun, ask your hotel concierge, or consult blogs. You can also do a City Running Tour (shameless plug) for a guided city run!

Please be safe. No running/walking alone at night or down creepy alleys. Also, make sure to bring water (see tip #1)!

4. Do active sightseeing! I love my vacations to have the right mix of activity and relaxing, about 50/50. Long afternoons at the beach are amazing, but it’s not something that I can do day after day after day; I need some activity. Besides walking or running, there are so many other things to try while on vacation. In Costa Rica we went surfing, zip-lining, and hiking. In Mendoza we rode bikes (between vineyards). In San Juan we kayaked and hiked. In Rio we… danced. Dancing is an activity. The fun just goes on and on!

5. Balance healthy choices with indulgent ones! It is my personal philosophy that indulgences are healthy, especially while on vacation. If you are spending the time and money to travel somewhere you better make it worth it! Go to France and not eat a crepe: blasphemous. Make it to Brazil and not drink a caipirinha: it’s illegal. Travel to Italy and not eat pasta: why even go? Savor all of the amazing, local experiences and balance them with other healthy choices.

It’s hard enough to make healthy choices 100% of the time while at home in your normal routine, let alone on vacation. It’s ok that you didn’t run 30 miles that week and it’s ok that you had wine and dessert most days. Stressing about these things is not going to help. Stress does your body no good. It sheds years off of your life and adds pounds to your frame.

Relax. Be active. Be healthy. Be balanced. Be on vacation. After all, #YOLO.

My open heart surgery was 7 years ago and it’s an My open heart surgery was 7 years ago and it’s an anniversary I will never not celebrate. 

I carried a lot of trauma with me for a long time. I was nervous for every hike, every workout, religiously checking my heart rate, wondering if this would be the time my heart fails me again. Very dramatic, I know. But I kept at it, doing these things I love to do, working through the fear. Now the intrusive thoughts are few and far between. 

So here I am 7 years later, a stronger person both physically and mentally, hanging out at the top of a mountain with my babies after a nice, challenging hike.  It’s all I really want. 

I’m so grateful for this life and for the people who continue to support me ❤️
