Thursday Things 02.18.16

Last night I went to my first ever book club meeting! It was pretty fun. We discussed Rising Strong by Brene Brown. I don’t normally read this type of book, so it was good to have a reason to pick it up. The book talks about how to get back up after you fall and how to own your disappointments, failures, and heartbreaks so that you can move forward. It was a good read and I enjoyed discussing it with the group. And with any successful book club, wine and delicious snacks were also involved.

I also enjoyed these things this week:

  • Some tasty shrimp recipes: yum woon sen with shrimp, shrimp in thai coconut sauce, grapefruit + avocado bowls with shrimp, shrimp carbonara, and shrimp tacos with green chile adobo.
  • I gasped out loud when I came across these homemade animal crackers. They look so cute and delicious!
  • Replace “I can’t” with “I can”.
  • Read this love letter to your body and remember to love it.
  • These diy plywood frames with glass are awesome.

Thursday Things 02.11.16

The Broncos won the Super Bowl! WOOP WOOP. I watched the first half of the game at the Minneapolis/St. Paul airport, but then had to board the plane at half time, so I missed the last half of the game. Lame. To make up for it I went to the Super Bowl Parade on Tuesday with 1,000,000 of my closest friends. It was absolutely insane! Parking was a nightmare, but my friends and I made it to the route just in time for the parade to start. The energy from the crowd was ridiculous and it was a beautiful 55-degree afternoon. I spent the next few hours with friends on patios enjoying the February sunshine and views of the city. Not a bad Tuesday afternoon!

These things aren’t bad either:

  • A plethora of delicious options for Valentine’s Day dessert: conversation heart sugar cookies, Valentine’s Day almond cake, orange blossom almond cream tart for two, conversation heart cookies, peanut butter chocolate lava cakes, chocolate sugar cookie hearts, and one-bowl chocolate rose cake for two.
  • The 10 Pancake Commandments. Abide by these rules and make a delicious breakfast.
  • These simple wood slice shelves are pretty awesome.
  • 15 books to check out in 2016. I’ve read 5 of them and definitely want to check out the others!
  • The Lumineers have a new song called Ophelia. I’m slightly obsessed with them. Who want to go to their concert at Red Rocks on June 7 with me!?

I hope you are doing fun things this weekend, like getting together with people that you like a lot and maybe some that you love.

Cherry Beet Smoothie

I’m all about the smoothies right now. Also, I’m all about tart cherries, beets, and pretty red things. It is, after all, almost Valentine’s Day.

Let’s get festive with this cherry beet smoothie!

Cherry Beet Smoothie

Smoothies are one of my favorite weekday breakfast items. Not only are they delicious, but they are quick to make, super healthy, and keep me full through the morning. Plus, they never get boring, because you can easily swap the ingredients.

My morning smoothies always contain the following:

  • Nut milk – usually almond milk, but sometimes cashew milk
  • Seeds – chia seeds or flax seeds
  • Greens – usually kale
  • Protein – usually protein powder, but sometimes nuts or nut butter
  • A frozen banana – sometimes half of one, sometimes a whole one

Often times that is just what it is, but other times I like to switch it up and experiment with new flavors. Some days I’ll add carrots or spices or both. Some days I’ll sub half of the banana with other frozen fruit, like pineapple or mangos. Some days I will have this apple ginger cucumber green smoothie and some days I’ll have this pineapple ginger turmeric protein smoothie. There are just so many flavor combinations to try!

Cherry Beet Smoothie

This cherry beet smoothie was inspired by Valentine’s Day. It’s pretty and I love it. In it are all the things I already listed along with a few others: a beet, frozen tart cherries, and apple cider vinegar.

Beets are packed with nutrients like manganese, vitamin C, betaine, fiber, and potassium and have detoxification and anti-inflammatory benefits. Beets can also help prevent heart disease and boost energy. The only downside is that they are super colorful and can stain your hands red. It’s ok though, the beets are worth it.

Cherries boast many of the same health benefits, but they also help with post-exercise muscle soreness and sleep. I love having frozen cherries in my freezer with a couple of dark chocolate chips when I need to satisfy my after dinner I-need-something-sweet craving.

I also added in some apple cider vinegar (ACV). I love this stuff. It helps support a healthy immune system, promote digestion, and aids with weight loss. The acidity of the ACV pairs well with the earthiness of the beets.

With all that said this an extremely delicious and healthy concoction.

A bright red, beautiful, delicious smoothie full of healthy things like beets, tart cherries, apple cider vinegar, chia seeds, and greens.
Serves: 1
Ingredients
  • 1 cup almond milk (or cow, soy, cashew, etc)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon chia seeds
  • 1 medium beet, peeled and cut into large chunks
  • ½ cup frozen tart cherries
  • ½ frozen banana, sliced
  • 1 tablespoon almond butter*
  • 1 handful greens (spinach, kale, beet greens)
Instructions
  1. Add everything into a blender and blend until smooth. Top with extra cherries and chia seeds. Enjoy!
Notes
*The almond butter can be replaced with any nut butter, a ¼ cup of whole nuts, a scoop of protein powder, or ½ cup Greek yogurt.

Thursday Things 02.04.16

Earlier this week I met up with some friends over at Stem Ciders for a cider and cheese pairing. It was my first time going there and it was super fun! They also have tapas, macaron, and pie pairings. Needless to say, I’ll be going back there for more.

And now here are some other things I came across this week:

  • Get all the dips ready for the Super Bowl on Sunday: homemade french onion dip, chunky guacamole, margherita pizza dip, roasted corn dip, and warm cuban sandwich dip.
  • Homemade frosting is one of the best things ever.
  • Let’s work on living a more creative life.
  • Having a mantra can be a powerful thing. Set intentions.
  • Come over some time and we’ll pair Girl Scout Cookies with wine.

In other news, I’m headed back to Minneapolis/Hutchinson/Sioux Falls tomorrow for a super fun weekend that will be spent helping my sister find a wedding dress, celebrating her birthday, and convincing her to have her bachelorette party in Denver. It’ll be pretty great.

And also, GO BRONCOS! Cheer them on for me, because I’ll be flying back to Denver during the game.

An Easy Core Strengthening Workout

A strong core is super important. Your core is in the middle of your body and is essentially the origin of all movement. Strengthening your core can help improve both balance and posture and can also help prevent injuries.

Because I want you to stand up straight and not fall down, I put together an easy core strengthening workout for you. By easy, I mean logistically easy. It is made up of 10 bodyweight exercises: 5 dynamic exercises + 5 isometric holds. The only equipment you need is a mat and a timer and the whole thing should only take 5-7 minutes to complete. This means you really have no excuse to not do it.

Core Strengthening Workout

This easy core strengthening workout can be as difficult as you want to make it. You can go through it 2-3 times total and/or hold the isometric exercises for longer than 30 seconds. There are also ways to regress some of the exercises if you need it as well.

My open heart surgery was 7 years ago and it’s an My open heart surgery was 7 years ago and it’s an anniversary I will never not celebrate. 

I carried a lot of trauma with me for a long time. I was nervous for every hike, every workout, religiously checking my heart rate, wondering if this would be the time my heart fails me again. Very dramatic, I know. But I kept at it, doing these things I love to do, working through the fear. Now the intrusive thoughts are few and far between. 

So here I am 7 years later, a stronger person both physically and mentally, hanging out at the top of a mountain with my babies after a nice, challenging hike.  It’s all I really want. 

I’m so grateful for this life and for the people who continue to support me ❤️
