Chocolate Cranberry Ginger Cookies (Vegan)

These Chocolate Cranberry Ginger Cookies would be a great addition to your holiday cookie tray.

Why?

Because…

They are easy to make.

They are actually not too bad for you (as far as cookies go).

They are DELICIOUS.

I don’t see any reason to continue this list.

Last year I mentioned that my mom and I enter the Star Tribune Cookie Contest each year. Since I live in Denver now, we weren’t able to have our little baking day this year to create a new cookie recipe. (Maybe next year we’ll have to do it via Skype. Mom – thoughts??)

Two years ago we submitted the recipe for these Chocolate Cranberry Ginger Cookies. Although it didn’t make it as a finalist, the recipe did receive an Honorable Mention, which was a huge win in our book. HUGE.

These Chocolate Cranberry Ginger Cookies even made it into The Duesterhoeft Café cookbook. So you know they’re good.

So yeah.

They are easy to make – All you need is a bowl, some measuring equipment, and a wooden spoon. The wet ingredients are added into the dry ingredients to form some thick dough, which is then rolled into balls and baked into cookies.

They are healthy-ish – These cookies are vegan and filled with great things like coconut oil, applesauce, and white whole wheat flour. Not to mention the added health benefits from chocolate, cranberry, and ginger. Feel free to grab more than one.

They are delicious – Chocolate cookies are always amazing, but the ginger and cranberry give them an extra dose of delicious and a nice holiday flavor.

Gobble up two and then savor one. You don’t even need to feel guilty about it.

Chocolate Cranberry Ginger Cookies (Vegan)

These Chocolate Cranberry Ginger Cookies are the perfect addition to your holiday cookies tray. They are easy, healthy, vegan, and very delicious!
Serves: 24 cookies
Ingredients
  • 1 ½ cup white whole wheat flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 2 tablespoons corn starch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground ginger
  • ¼ cup coconut oil, melted
  • ⅓ cup unsweetened applesauce
  • 1 tablespoon vanilla extract
  • ¼ cup crystallized ginger
  • ⅓ cup dried cranberries
Instructions
  1. Preheat the oven to 325 degrees and line baking sheets with parchment paper.
  2. In a large bowl, whisk together the dry ingredients (flour -> ground ginger).
  3. In a medium bowl, stir together the coconut oil, applesauce, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until incorporated. Stir in the crystallized ginger and dried cranberries. The dough will be thick.
  5. Roll dough into small balls and place about 2 inches apart on the prepared baking sheets.
  6. Bake for 12-14 minutes, being careful not to over-bake. Let cool for 10 minutes before transferring cookies to a wire rack to cool completely.
Notes
You can find crystallized ginger in a couple of different places. The first few times I made these I used crystallized candied ginger chunks from Trader Joes and chopped them into small pieces. This year I used Archer Farms crystallized ginger from the spice aisle in Target.
The corn starch can be omitted, but it gives the cookies a softer and chewier texture.
Drizzling (vegan) chocolate on top of these cookies is also a good idea and dresses them up a bit.
You can make the dough ahead of time, shape them into balls, and place in a Ziploc bag in the freezer until you’re ready to bake them. Just let them thaw a little bit before placing them in the oven.
Baked cookies last up to 5 days in an airtight container.

Thursday Things 12.10.15

I feel like I’ve been slacking on my posts a little bit here. It’s not that I’m crazy busy, but rather that I don’t have a consistent schedule like I used to in Minneapolis. At General Mills I knew I would be working Monday-Friday 8:30ish-5:00ish and could properly plan my schedule around it: when to bake, when to blog, when to run, when to meet up with friends. Now I may be at work from 8:00-7:30 one day and only 11:00-2:00 the next – all depending on my clients. For a Type A planner such as myself this throws me a little bit off of my game. I think it’s probably good for me though.

The great thing is that the days absolutely fly by! On Tuesday I was at 24 Hour Fitness for just shy of 12 hours. I trained 6 clients, consulted with 2 new members, attended a meeting with the other trainers, and fit in a quick workout myself. It went faster than any 8-hour day at General Mills. Needless to say, I’m happy with my career change so far.

So anyways, I’m going to try to work on my hustle and stay consistent with my posting. Otherwise my mom will call me out.

Also, the Denver sunrises are insanely fierce and I like these things:

  • I forgot how genius chocolate bark. Check all these out: dark chocolate cherry quinoa bark, pretzel peanut butter stuffed chocolate bark, mint chocolate swirl bark, chocolate almond ginger bark and cherry almond bark. I think I need to make some.
  • Then there are all of these amazing cookies on Sally’s Christmas Cookie Palooza.
  • Settl, a great new online dating app 😉
  • Do you have an RBF (Running Bitch Face)?
  • A guide to craft beer, just in case you need it.

Oh! And did you see that my Chocolate Pistachio Meringue recipe made it to a post on Buzzfeed -> 17 Fantastic Recipes for Meringue Cookies. It made me just a leeeetle bit excited.

Thursday Things 12.03.15

It’s been getting cold here, so the snow is actually starting to stick to the ground and accumulate. Let me tell you, 25 degrees in Denver does not feel like 25 degrees in Minneapolis. Thank you, sunshine. It’s pretty incredible.

And these things are pretty cool too.

  • Last weekend I was really tempted to watch Christmas movies, but decided to wait and watch old movies instead (while knitting, naturally). I watched How to Marry a Millionaire, High Society, Roman Holiday, His Girl Friday, and Anchors Aweigh and just can’t get enough. Any recommendations?
  • A pretty updo that is casual, but would be awesome for any upcoming holiday parties.
  • Let’s go to all these fairy-tale towns in Germany, but then also make a stop in Berlin (because, Berlin).
  • All of these cookbooks are gorgeous.
  • I’m really tempted to buy this sweatshirt.

The picture above is an exception to what I mentioned earlier about the sun. Normally there are less clouds and more rays.

Full Body Strength and Cardio Workout

Happy December!! How was your Thanksgiving?? Was it filled with family and friends and turkey and pie and wine and laughter?

I hope so!

But maybe too much turkey and pie and wine? I totally hear ya. This full body strength and cardio workout will get your heart rate up while working a variety of muscle groups, helping to burn off those second helpings of pecan pie.

Full Body Strength and Cardio Workout

This workout consists of four supersets where you will perform two exercises back-to-back three times before moving to the next superset. Each superset contains one full body strength training exercise for 15 reps and one plyometric exercise for 30 seconds.

It’s hard, but you’ll love it when you’re done.

You will notice that a lot of the exercises here incorporate three-dimensional movements. This is on purpose.

Many common strength training exercises primarily work in the sagittal plane (moving forward and backward) – biceps curls, walking lunges, squats, cable rows, etc. This is just fine, but we want to make sure to incorporate the frontal (side-to-side) and transverse (rotational) planes as well in order to develop the muscles to function in all different directions.

For example, the side lunge with biceps curl. You are lunging out to the side (frontal plane), but your arms are moving forward for the biceps curl (sagittal plant) – that’s 3D movement! Also, you are working both your upper and lower body. Basically, you’re getting a lot of bang for your buck in this one exercise. Awesome.

And don’t forget to really push it during those plyos. I want that heart to be pumping!

Here are the exercise cues:

  • Squat with Medicine Ball Overhead Raise: Stand with feet hip-width distance apart, toes pointing forward holding a medicine ball in your hands. Squat down by bending your knees and flexing your hips, keeping your back straight and your knees behind your toes. Lower until your knees reach a 90-degree angle and touch the medicine ball to the floor. Engage your glutes and rise back up to standing, raising the medicine ball up over your head.
  • Jump Squat: Stand with feet hip-width distance apart, toes pointing forward. Lower down until your thighs are parallel with the floor. Thrust your hips forward and jump into the air, landing softly back down in a squat position.
  • Knee Lifts with Lateral Raise: Stand with feet hip-width distance apart, toes pointing forward, and a dumbbell in each hand. Raise your right knee while raising your arms out to the side, palms down, until they reach shoulder height. Lower arms and leg back down to starting position. Continue this pattern with aternating legs.
  • BOSU Ball Shuffle: Stand with your right foot on a BOSU ball and the left foot on the ground, toes pointing forward. Lower down into a squat, then jump up towards the right, landing in a squat position with your left foot on the BOSU ball and your right foot on the floor on the opposite end. Continue to shuffle back and forth.
  • Reverse Lunge with Twist: Stand with feet hip-width distance apart, toes pointing forward, a dumbbell in each hand, and arms extended out in front of you. Take a step back with your left foot and lower into a lunge, making sure that your right knee does not go past your right toe. Both knees should be just around a 90-degree angle. Using your core, twist towards the right so that your arms and torso are facing the right. Twist back to center and rise back up to standing. Alternate legs.
  • Mountain Climbers: Start in a plank position. Bring your right knee forward towards your right elbow. Explosively draw your left knee forward as your right leg moves back, like you are running. Continue this motion.
  • Side Lunge with Biceps Curl: With a dumbbell in each hand, stand with your feet facing forward. Step with your left foot out to the side, lowering into a side lunge. Make sure that your left knee stays behind your toes and in line with the outside of your foot. As your lower into the lunge, curl the dumbbells up to shoulder level keeping your elbows at your sides. Rise back up to a standing position, pushing down through your heels, while lowering the dumbbells back down to your sides. Alternate legs.
  • Plank Jacks: Start in plank position. Jump your legs out to the side, then bring them back to center. Continue in this in-out-in-out pattern.

Are you ready for Thanksgiving next week? Does anyone else feel like it should still be October?? I guess time flies when you’re having fun?

This is the first year ever that I won’t be home for Thanksgiving and it breaks my heart just a little bit. Luckily I have a couple of Friendsgivings to go to, so I don’t have to sit at home with an entire pie and bottle of wine to myself.

Although that doesn’t sound half bad…

Neither do these things:

  • So many amazing pie recipes. Which should I make for Friendsgiving: deep dish french silk pie with hazelnut oreo cookies crust, bittersweet chocolate pumpkin tart, caramel apple crumble pie, salted bourbon pecan pumpkin pie, black bottomed pecan pie, sweet potato pie with pecan topping, pear almond tart, or caramelized pear and hazelnut crumble tart? But then there’s this pear cardamom cake with brown butter frosting & chocolate glaze. Decisions, decisions…
  • Your guide to classic holiday cocktails. Cheers!
  • Without podcasts the elliptical/stairmill/bicycle is a major snoozefest. Here are 10 podcasts to listen to at the gym.
  • Some nutrition questions answered by professionals.
  • Tips on throwing the best dinner party. Don’t forget to invite me!! I’ll bring pie (one of the options above).

I met up with some friends at Telegraph last night for a fun cocktail. It’s just down the road from where I live and I will definitely be going back. But Blackbird is still my neighborhood favorite.

I love caramel, apples, snacks, and cake, so a caramel apple snack cake just makes sense.

The cinnamon/caramel/apple flavor combination is essentially the epitome of fall. The smell of this snack cake baking in the oven will make you want to grab some friends, go on pretty fall walk, and jump in piles of crisp leaves.

Maybe those crisp leaves are now buried under a pile of snow?? A walk is still a good idea.

So go do that as these are cooling. Then when you come in you can enjoy a slice with mugs of steamy coffee and your favorite people.

To make these I took a basic blondie recipe (1 stick butter, 1 cup sugar, 1 egg, 1 cup flour) and added in some cinnamon, a shredded Zestar apple, and some caramel bits (these things). The moisture from the apple made these light and cakey rather than gooey and dense like blondies typically are.

Which is why I am calling it a snack cake.

Side note: Make sure to squeeze the excess moisture out of the shredded apple!

On a semi-related note, Katie and I had friends visiting this weekend from California (hi Ellie & Oliver!), so we drove towards the mountains for short, yet scenic hike at St. Mary’s Glacier. It was so, so beautiful. We took lots of pictures and stopped for lunch near the glacier. Naturally, I packed pieces of this caramel apple snack cake for dessert.

It was such a fun afternoon. I don’t think the beauty of the mountains will ever stop surprising me. Never, ever.

A snack cake full of all the best fall flavors: cinnamon, apple, and caramel!
Serves: 16 pieces
Ingredients
  • ½ cup (1 stick) unsalted butter, melted
  • 1 cup brown sugar
  • 1 egg
  • 1 ¼ cup flour
  • 1 teaspoon cinnamon
  • 1 medium apple, shredded (I used a Zestar)
  • ½ cup caramel bits
Instructions
  1. Pre-heat the oven to 350 degrees F. Line an 8x8” baking pan with foil and spray with non-stick spray.
  2. Mix the melted butter, brown sugar, and egg together until everything is combined.
  3. Stir in the flour and cinnamon until incorporated.
  4. Fold in the shredded apple and caramel bits (saving a bit to put on top).
  5. Place batter into the prepared pan and spread evenly. Sprinkle on the remaining caramel bits and a little bit of sea salt.
  6. Bake for 30-35 minutes or until the center is set.
  7. Cool completely in the pan, then cut and serve!

My open heart surgery was 7 years ago and it’s an My open heart surgery was 7 years ago and it’s an anniversary I will never not celebrate. 

I carried a lot of trauma with me for a long time. I was nervous for every hike, every workout, religiously checking my heart rate, wondering if this would be the time my heart fails me again. Very dramatic, I know. But I kept at it, doing these things I love to do, working through the fear. Now the intrusive thoughts are few and far between. 

So here I am 7 years later, a stronger person both physically and mentally, hanging out at the top of a mountain with my babies after a nice, challenging hike.  It’s all I really want. 

I’m so grateful for this life and for the people who continue to support me ❤️
